How time flies! Fifteen years ago Joel Robuchon opened his eponymous restaurant in the Metropole Hotel, and not long afterwards Mr maBoum and I celebrated a special occasion with lunch there. We were intrigued by the novelty of a view of chefs at work in the kitchen, but I also had a professional interest in Robuchon's signature dish: the humble mashed potato. You see, as a child I was chief spud masher for family Sunday lunches.

Sadly Chef Robuchon died last year, but Christophe Cussac continues the good work in his kitchens. If you trust it, TripAdvisor currently ranks the restaurant 4th best in Monaco, after Montgolfiere, Blue Bay, and Caffe Milano. As for the potatoes, let's just say that I'm sure my mum would have preferred mine, if only because the great French chef wasn't regularly available for mashing at children's rates.
