Hotel de Paris's 8th floor Grill restaurant has a new pair of hands in the kitchen tomorrow and Saturday. Sicilian chef Vincenzo Candiano is working with Franck Cerutti to give Monaco gourmets the opportunity to taste southern Italian specialities, including his signature dish, black spaghetti with sea urchin and ricotta (spaghetti freschi neri con ricci e ricotta). Self-taught Candiano was named best young chef of South Italy in 2007, and in 2013 was awarded a second Michelin star for his restaurant Locanda Don Serafino in Ragusa, Sicily.
