Monte Carlo SBM is introducing Peruvian cuisine to the Principality through Coya, one of a chain of restaurants already established in London, Miami, Dubai and Abu Dhabi.

The brand was founded in 2012 by Indian entrepreneur Arjun Waney and CEO Adam Bel Hadj. Waney is known for introducing London to La Petite Maison's Provencale cuisine in 2006. In a Newsweek interview he said he'd been to La Petite Maison in Nice and offered the owner 25,000 euros for every restaurant he would open under the name. He continued, "They were stupid enough to sign the contract to give me the world rights for that price."

Such business practices don't appear to have been used in Peru, where executive chef Sanjay Dwivedi spent time in various restaurant kitchens, learning about Peruvian dishes. The food is a mix of Latin American and Asian, and in Monaco it will be prepared by chef de cuisine Fabrizzio Fossati.

CEO Adam Bel Hadj details the essence of the Coya brand in a YouTube video and there are plenty of reviews of established restaurants on TripAdvisor. The majority are good, with most disappointed diners complaining about service and noise.

Coya Monte Carlo is open from May to October, with Sunday brunch service starting in June. It's located in the Sporting d'Ete complex and as well as the restaurant contains a pisco bar, lounge with live DJ, and for cosy tete-a-tetes a private dining room.
