Monte Carlo SBM has lost two of its chefs to retirement recently. At the Hermitage Hotel, Joël Garault (see our 28 Jan newsletter) has been replaced by Benoît Witz, who has experience at several top notch French restaurants. The chef has already worked two stints at Alain Ducasse's Louis XV in Monaco as well as at Ducasse's Bastide de Moustiers. In the Vistamar kitchens he's currently preparing a seasonal menu including lobster salad and hake with fennel and Ligurian red prawns.

On the other side of Casino Square Jean-Claude Brugel is moving from the Cafe de Paris to the Thermes Marins, where the current chef is due to retire next week.

Finally, following a successful partnership last year, Fairmont Monte Carlo and Nikki Beach are renewing their collaboration for 2016. Starting today Nikki Beach takes over the hotel rooftop restaurant and club, open throughout April 7:00-20:00 and from May until 2 in the morning.
