Michelin Red Guide 2013 published
France's gastronomic bible, the Michelin Red Guide went on sale last Friday, with Monaco retaining 7 stars, shared among 4 restaurants:
- 3 stars, Ducasse's Louis XV
- 2 stars, Joel Robuchon at Metropole Monte Carlo
- 1 star
Vistamar at Hermitage Monte Carlo
Yoshi at Metropole Monte Carlo
Just down the road at Eze bord de mer, Patrick Raingeard at his eponymous Table has gained, or rather regained the star that he previously earned whilst head of the kitchens in Mandarine, the restaurant of Monaco's Port Palace Hotel. The chef quit the Principality for Cap Estel at the end of 2011.
Originally from Brittany, Raingeard's cuisine uses seasonal produce, mixed with Mediterranean flavours and spices from further afield. His signature dishes include:
- foie gras lollipop (sucette au foie gras)
- pigeon with candied kumquats (cupidon de pigeon aux kumquats confits)
- scallops with mango jus and verveine flavoured panais mousse (coquille Saint-Jacques a la plancha, jus de mangue acidule, mousse legere de panais a la verveine)
The Michelin Red Guide is on sale in shops for 22.80 euros.
